Menu Plan Monday

It's a busy week. We have lots of activity and then the kids and I are leaving for the weekend to see my niece and nephew baptized this Sunday in Oklahoma City. Hope everyone has a great week! See lots more menus at orgjunkie.com

Breakfasts: whole wheat banana muffins, scrambled eggs, toast, oatmeal, waffles

Lunches: sandwiches, mixed picks, egg salad, leftovers, fruit and veggies

Dinners:

Monday-- Manicotti, garlic bread

Tuesday-- lemon pepper chicken, cole slaw, green beans

Wednesday -- Mexican chicken lasagna, refried beans, salsa, sour cream

Thursday -- steak and peppers, green chili rice, fruit salad

Friday -- hamburger soup and biscuits

Missing Menu

Well, I didn't get my menu posted for this week, but I thought I'd show you a healthy, simple lunch we do often here that my kids LOVE. We call it mixed picks. It lets them choose what to eat, but gives them a good variety. In the first example, I have cheddar/jack cheese cubes for protein and a variety of in season, on sale fruits and veggies. They can have ranch dressing to dip if they choose. In the second pic, we have some different choices of fruits and veggies, plus hard boiled eggs and cheddar and mozzarella cubes. The combinations are so numerous, my children never tire of this meal. You can add a slice of homemade whole wheat bread and some real butter as a nice addition. What do you guys do for a simple, healthy lunch?

Menu Plan Monday





Well, I'm still doing well on my shiny sink challenge. This should be an interesting week for menu planning. We may be getting a decent accumulation of ice which could possibly cause us to lose power. So, I am planning some meals that could be cooked on the grill if need be. I am also making some egg salad and banana bread. I have two loaves of whole wheat bread in the freezer that I made last week. Breakfasts: Banana Bread, Oatmeal, Toast, Breakfast Burrito (we have eggs every morning with whatever else we are having)

Lunch: leftovers, grilled cheese, eggs salad sandwiches, cheesy tortillas (lunch is always served with raw fruits and veggies)

Dinners:

Monday: chili, cornbread, shredded cheese and sour cream

Tuesday: Baked or Grilled chicken, Day Before mashed potatoes, salad

Wednesday: Homemade pizza (can be done on the grill, so yummy!), salad

Thursday: Riblets either grilled or in the crockpot, green beans, zesty veggie salad

Friday: Pasta bake and fresh bread for the family, Mom goes to book club, taking more homemade whole wheat bread

Saturday: Family game night at the in-laws, having a potato bar.

Sunday: Soup night, still undecided what to make...

Menu Plan Monday

Here is my menu for the week. I am keeping it all fairly simple as I am fighting a cold this week. Crock Pot lady has resolved to use her crockpot every day in the year 2008. She gives great pictures and lets you know what she thought of the recipe after she tries it. I can't wait to try some great recipes as I love, love, love my crockpot!

Menu Plan Monday (Finally!)


Horay for me, I'm finally going to make it to MPM! Here is what we will be eating this week. Lunches listed are what the kids eat. I usually eat leftovers or salad. I love salads with dried cranberries and nuts and seeds. Yummy. My favorite dressing is called Hendrickson's and it is fat free and 60 calories per serving and oh, so yummy. I'm not sure if it is a local brand or national, but I'm pretty sure you can order it online if you Google it. :)

Not the most exciting menu this week. I am using up a lot of what I have. So there is a lot more processed food than I would like, but hey, it's not every week right? For more menus check out Laura's blog.

Lunch--mac n cheese, fruit
Dinner--spaghetti, bread, salad

Tuesday--
Breakfast--oatmeal, fruit, milk
Lunch--tomato soup and grilled cheese
Dinner--chicken enchiladas, homemade refried beans, chips and salsa

Wednesday--
Breakfast--eggs, toast, milk
Lunch--PB sandwich, fruit, carrots and ranch
Dinner--grilled marinated chicken, fruit salad, heavenly eggs

Thursday--
